Why the differences belong in one place
Three options on three pages means remembering what you read a while back. People jump, return and end up choosing on price, because price is the only figure that survives the trip.
Side by side, the differences read themselves. They see the middle option has more, and crucially they see what the extra buys, which is the only thing that justifies a higher price.
On a phone the table becomes cards. Three columns side by side on a phone means text nobody can read, and enlarging it loses the header, so you no longer know which column is which.
When it makes no sense
When there are more than three options differing across dozens of rows. That becomes a table nobody finishes, and the decision falls back to price anyway.
And when the options differ only in name and price. Then the table just proves there is no difference.
